Watercress is a leafy green that grows in natural spring water. It is considered superfood it has 50 vitamins and minerals. It is a great source of calcium. Watercress helps to boost the immune system and has anti-cancer qualities.
In Haiti, we use watercress in stews as well as salads. This recipe is an ode to watercress salads I had as a child
Mango Watercress Salad
Ingredients
Salad
- 4 cups watercress
- 1 mango, chopped
- ¼ cup red onions, chopped
- 1 cup tomatoes, chopped
- 1 avocado, chopped
Dressing
- ¼ cup olive oil
- 1 tbsp apple cider vinegar
- 1 tsp sea salt
- ¼ cayenne pepper
- Juice of one lime or lemon
- 2 cloves garlic, minced
- ½ of scotch bonnet, seeded and chopped
Directions:
Dressing: In a bowl mix all ingredients.
Salad: In a big bowl add all ingredients, mix well. Add dressing and toss.
Plantain Mango Kabobs
Ingredients
1 Fried, Grilled, Or Baked Ripe Plantain, sliced
2 mandarin oranges, peeled
¼ red onion
Mango, Chopped
Directions:
On skewer place ingredients in the following order: Plantain, onion, mandarin, and mango. Repeat until skewer is full.
