Celebrating Pi day with a stone fruit pie. Hello from my inner nerd.
Pi Day is an annual celebration of the mathematical constant π. Pi Day is observed on March 14 since 3, 1, and 4 are the first three significant digits of π.
Stone Fruit Pi
Ingredients:
2 large peaches, thin slices
1 large nectarine, thin slices
3/4 cup almonds
3/4 cup walnuts
1 1/2 dried unsweetened coconut
6 -8 dates
1 lime, juiced and zested
2 tbsp of liquid sweetener
1/4 tsp cinnamon
1/4 tsp ginger powder
1/4 tsp vanilla extract
Directions:
To assemble the crust, put nuts, dates, and coconut in food processor and process until well mixed and sticky. Pour crust into pie pan and pat firmly into place. Use your hands to bring the crust up the sides of the pie pan, all the way to the rim.
In mixing bowl, add lime zest and juice, as well as liquid sweetener, cinnamon, ginger and vanilla extract. Whisk until well blended. Add nectarines and peach, coat well.
Layer the sliced nectarines and peaches in pie pan in a circular, overlapping pattern.
